Well i think even with a round course a good racer won't go round, at least as long as you only got red and blue gates (like not 5 gates from left to right to force your to ride a circle).
That's at least what i experienced during training, during which our runs are mostly much more turny than in the actual race. So just by increasing offset of the gates, you won't make the racer go round, as round takes more time.
I think the problem is more that for the people participating in racing, PGS is much more fun than GS (at least for me), so we have a jolly good time racing, but not much fun for people who don't race to look at it.
A bit like table tennis, I trained 5 days a week for ages plus 1 day competition per week. It was great fun playing with the small balls, big balls were mostly introduced for television (lower speed and better visibility). In the end I think noone minded but before introduction most players I knew were against it. I still like watching it on telly or live, but most people don't see what's going on even with bigger balls and the resulting slower speed (though it helped a lot) and so it's a sport which has many followers but pretty much no audience outside of active players. I think it's a bit the same situation for snowboard racing.

Yes, I've heard it from racers before: competition against another in real time makes you push it harder. But for promoting the sport... C'mon, these funky jumps don't look neither fluid nor fast. It is hard to convince people to participate in a sport consisting of funky jumps I guess.
