There is also several windsurfing spots in Poland, about 40 kilometers from Gdańsk (Danzig), at Hel Peninsula f.ex.:

We often go windsurfing to Prasonisi/Rhodes/Greece:

When is windy there, http://www.windguru.cz/pl/index.php?sc=37 , is not so hot. But during the holidays there's a lot of people on the water. It seems to me, that You can go by ferry directely from Venezia to Rhodes.
Forgot to tell that: my girlfriend is red-haired, white skin, no sun at all! Second no planes at all! 8) 8O
So: only car full of windsurf stuff. And so I'll keep in mind Poland.
Ferry go directly from Venice to Igoumenitsa then 200 km to Lefkada, 1 day and 2 nights of trip, but they tell me good in summer and hot and wet.
Seems strange but I like >20 C windsurfing (but not cold windsurfing in winter! better sowboarding).
BTW: reached 20 windsurfing days
